I’ll admit I’m not big on “mixes” for baking. I know, I know it makes baking much easier and quicker – but do you really want the baking process to go that quickly? I love time in the kitchen so rushing, for me, is never a priority.

I’ll also admit that searching, trying and buying different ingredients for vegan baking is a huge part of the fun for me. Obviously, when the end result is super yummy it’s a bonus.

Having said that, I know there are a lot of people (moms) out there who, at times, can really appreciate the easier “mix-using” route.

I saw these mixes in TARGET – yes, Target, which means they should be readily available for most. They’re from the company Cherrybrook Kitchen. You can also purchase their mixes through their website (they have single packages and a variety pack for purchase) and in bulk through Amazon (6 boxes).

This photo only shows the boxes I purchased to try, not their entire line. Their mixes are peanut free, dairy free, egg free and nut free.

Good for those with allergies and also excellent for us vegans out there. (If you’re interested, they also make gluten and wheat free products).

I decided to make the Cherrybrook Kitchen yellow cake mix.

And bake it in my bunny mold for a quick and easy Easter cake.

Now, don’t laugh, I’m not a frosting master – definitely something I need to work on (meaning spend much more time experimenting with), but the cake tasted great – and that’s really what matters.

(you'll notice I did take a little time to pain my nails an Easter pink- non-toxic polish of course)

These mixes are definitely worth trying out. They won’t replace all my baking from scratch fun, but for a quick tasty treat, they do the trick.

Enjoy!

P.S. Cherrybrook Kitchen does not know me and is not paying or compensating me in any way to say nice things about them. Just sharing because, well…it’s what I do. ~ Lita

  1. Love your bunny, it’s great. I haven’t tried any of the baking mixes yet. It’s tough finding good ones. I’ll have to give these a try, hubby likes to make his from scratch, thanks for posting!

    • Oh let me know if you try them and like them. I bought them on a whim and they’re fun, but I think I’ll mostly bake from scratch…which is more fun to me!! Need to work on the decorating though :)

    • I think the look of them…being like Arthur books…is exactly what drew me to them :) I need to make your stuffed grilled peppers…I’ve been dreaming about them!
