Nasoya TofuBaked Waldorf (ian) Salad
As a vegan, I'm sure you can imagine, I eat A LOT of tofu!! I have a whole system down now for draining/pressing the tofu, marinating it (if needed) and baking, sautÊing, roasting, stir-frying, baking, etc. with this magical soy food.
My favorite brand has to be Nasoya - and my favorite product has to be their TofuBaked marinated baked tofu, now in 3 varieties - Organic Chipotle, Organic Sesame Ginger and Organic Teriyaki!For this recipe I'm using the Sesame Ginger flavor.
Before I go on, you have to know that I can literally eat packs of these just the way they are! They're that tasty and ready to eat. Most of the time though, I cut them into pieces and put them on top of my salads - especially at the office for lunch during the week. I have also been known to cut the pieces up and toss them into pretty much anything I'm cooking - stir-fries, curries, tacos, soups, risottos, etc.Now for my Waldorf(ian) Salad - it's Waldorf salad-like actually because I typically can't follow a recipe all the way through without adding in what I like (and also what I have on hand).I began by chopping 2 stalks of celery:
Next, I added 2 Granny Smith apples and 1 Red Delicious Apple after I peeled and chopped them:
AND because I love apples with a little squeeze of lemon on them, I squirted the juice of 1 meyer lemon onto them (and because I happened to have one on hand).
I also added some chopped green onion to the mix - now if you're not a fan of onion, you can simply skip this part, but again, green onions are a bit of an addiction of mine so I add them when I can.
Next I added some sliced grapes - I only added green to keep with my green theme, but certainly red or a mix of both would be just as DELISH!
Now it's time for the pièce de rÃŠÂˇsis¡tance, the TofuBaked tofu - chopped into pieces (don't count the pieces because 1 - or 2 - may be missing)!!
Then, mix all these tasties together:
I then sprinkled on some sesame seeds - chopped walnut would've been a wonderful addition too and would've been more in sticking with a Waldorf Salad theme.I finished the salad off by mixing it all together with some Nasoya Nayonaise (about 1/4 cup - maybe a little more - use your taste to decide)!
DELISH!!
Optional, sprinkle the salad with a little pepper or if you're a TajÃn addict like me, then use that.

- 2 stalks celery chopped
- 2 Granny Smith and 1 Red Delicious Apple chopped

Mix everything together and then mix in about 1/2 cup (or more - to taste) Nasoya Nayonaise. Optional - Sprinkle with pepper or TajÃn (to taste).
