This recipe is amazing!!! It’s from my friend Wendy who’s son turned vegan when he was 15. Because she was such a dedicated (and amazing) mom, she really worked on putting meals on the table every night that her whole family would enjoy. She’s been sharing them with me and, honestly, they ARE amazing. I thought I’d put this up early, so if you want to make it for your Meatless Monday you have some time to get prepped.

Wendy’s Sweet and Sour Vegan Meatballs

1 jar of your favorite marinara sauce
1 large can cranberry sauce
1 bag Nate’s Meatless Meatballs (or other meatless meatballs – I used Trader Joe’s version)

  • Combine marinara sauce and cranberry sauce in pot and cook on stovetop about 1/2 hour until cranberry sauce is dissolved into the marinara sauce.
  • Pour the meatballs in a single layer into a 9×13 glass pyrex dish
  • Cover with the pre-cooked sauce
  • Bake for 35-45 minutes at 350 degrees

Serve over brown rice as a meal or serve in dish with toothpicks for appetizer
(double the recipe for larger portion)

Does it get any easier? I think a lot of times the easiest recipes taste the best.

  2. I sure wish a store in my area carried meatless meatballs! The local Brookshires does carry Morningstar Farms griller crumbles, though. I wonder how hard it would be to make those into meatballs? Any suggestions?
